Epilogo Sauvignon Blanc and Moscatel

Grape varieties used: 90% Sauvignon Blanc and 10% Moscatel de grano menudo (Muscat à petit grains).

Harvest: first half of September.

Wine-making process: Each of these varieties were developed separately to then proceed to the final coupage. This is placed in a short pre-fermentation maceration for about 8 hours to get a better extraction of the skin aromatic compounds, and then only the free-run juice is obtained by a direct running off of the juice by the saigné method, without any type of pressing. This free-run juice is then clarified through a static debourbage with cold at 7° C in an isothermal tank for 36-48 hours. This deboubaged free-run juice is fermented at very low temperatures, 13-14º C, to extract a greater aromatic expressiveness. With so low temperatures the fermentation usually lasts for about 20 days.

Tasting Notes: Bright, greenish steely yellow. Great aromatic intensity, but specially ‘complexity’, where floral and exotic aromas of the Sauvignon Blanc variety are very well integrated (grapefruit, mango, passion fruit) with Muscat hues of the Muscat variety. In the nose, the portion of the Muscat variety is almost scented. It is a very fresh wine and has great volume in the mouth. A honey, soft and silky sensation that provides the whole of these two varieties. It is very refreshing due to the small natural carbonic characteristic that this wine has. On the palate the wine is long and persistent. In the mouth it is a very complex wine.

Serving temperature: Between 6º and 8º C.
